I've been a fan of Hapa Sushi since they opened when I was going to school in Boulder. Then when I moved down to Denver after graduating, I started going to the Hapa in Cherry Creek to get my fix. The store on the Hill is my favorite because it's not as crowded but both places have the best Dragon Rolls I have ever had.
